  • 2 cups of all-purpose flour (maida)
  • 1/2 cup of water (adjust as needed)
  • 1/4 cup of yogurt
  • 1 tablespoon of oil or ghee
  • 1/2 teaspoon of salt
  • Extra flour for dusting

Method:

  1. Prepare the Dough:

    • In a large mixing bowl, combine the all-purpose flour, yogurt, oil or ghee, and salt.
    • Gradually add water and knead the mixture to form a soft and smooth dough. The dough should be slightly sticky but manageable. If it's too dry, add a little more water, and if it's too wet, sprinkle a bit of flour.
    • Once the dough is formed, cover it with a damp cloth or plastic wrap and let it rest for about 30 minutes. This resting period allows the gluten to relax and makes the dough easier to roll out.
  2. Divide the Dough:

    • After the resting period, divide the dough into small lemon-sized balls. Roll each ball between your palms to make them smooth and round.
  3. Rolling out the Rotis:

    • Heat a tawa (griddle) or a large flat pan over medium-high heat.
    • Take one dough ball and dip it into dry flour to coat it lightly.
    • Place the dough ball on a clean, flat surface and roll it out into a very thin, large circle. You can use a rolling pin to achieve this. Aim for a thickness similar to a handkerchief.
    • If the dough sticks to the rolling pin or surface, dust it lightly with more flour.
    • Once rolled out, carefully lift the roti and place it on the hot tawa.
  4. Cooking the Roti:

    • Cook the roti for about 30 seconds on one side until you start to see small bubbles forming.
    • Flip the roti and cook the other side for another 30 seconds. You should see some light brown spots forming.
    • Remove the roti from the tawa and place it on a plate. Repeat the process with the remaining dough balls.
