This story is about a little bird who learns the importance of letting go, and it teaches us a lesson we all need to remember to forgive, forget, and live in the present.  THE  BIRD  AND  THE  BURDEN  : Once upon a time, in a quiet forest, there lived a small bird named Mira. She had bright feathers and a sweet voice that echoed through the trees every morning. But unlike other birds who flew high and free, mira often stayed low to the ground. She looked tried and her wings dropped even though she was young.  Many animals in the forest wondered why mira never flew far. One day, an old wise owl aked her, " Mira, you are young and strong. This traditional recipe combines succulent pieces of mutton with a medley of spices and onions, creating a dish that's perfect for special occasions or a hearty family meal. Follow along as we take you through the ingredients and simple steps to create this mouthwatering dish at home.

Ingredients:

  • 500 grams of mutton, cut into pieces
  • 4 onions, thinly sliced
  • 2 tomatoes, finely chopped
  • 2 tablespoons of ginger-garlic paste
  • 2 green chilies, slit lengthwise
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of turmeric powder
  • 1 tablespoon of coriander powder
  • 1 teaspoon of red chili powder
  • 1 teaspoon of garam masala powder
  • Salt to taste
  • 3 tablespoons of oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Marinate the mutton pieces with ginger-garlic paste, turmeric powder, red chili powder, and salt. Allow it to marinate for at least 30 minutes to enhance the flavor.

  2. Heat oil in a pressure cooker or a heavy-bottomed pan. Add cumin seeds and let them splutter.

  3. Add thinly sliced onions to the hot oil and sauté until they turn golden brown and caramelized. This step is crucial for the rich flavor of the dish, so take your time.

  4. Once the onions are caramelized, add the marinated mutton pieces to the cooker. Sauté them along with the onions until they are well browned on all sides.

  5. Add chopped tomatoes and slit green chilies to the mutton. Cook until the tomatoes are soft and mushy, and the oil starts to separate from the masala.

  6. Now, add coriander powder and garam masala powder to the mutton. Mix well to coat the meat evenly with the spices.

  7. Pour in water as needed to achieve the desired consistency of the gravy. Adjust the salt according to taste.

  8. Cover the pressure cooker and cook the mutton on medium heat for about 3-4 whistles, or until the meat is tender and cooked through. If using a pan, cover and simmer until the mutton is tender, stirring occasionally.

  9. Once the mutton is cooked, remove from heat and let it rest for a few minutes.

  10. Garnish with fresh coriander leaves before serving hot with naan, rice, or chapati.

Enjoy the succulent and flavorful Mutton Do Pyaza with your loved ones and relish the taste of this traditional Indian delicacy.
