Introduction: Welcome to our kitchen, where we're about to embark on a culinary adventure with a timeless favorite - Mutton Pickle! Bursting with bold flavors and spices, this recipe promises to tantalize your taste buds and add a zing to your meals. So, roll up your sleeves and let's dive into the aromatic world of homemade Mutton Pickle.

Ingredients:

  • 500 grams of boneless mutton, cut into small pieces
  • 1 cup of mustard oil
  • 2 tablespoons of ginger-garlic paste
  • 2 tablespoons of red chili powder
  • 1 tablespoon of turmeric powder
  • 2 tablespoons of coriander powder
  • 1 tablespoon of fennel seeds (saunf)
  • 1 tablespoon of cumin seeds (jeera)
  • 1 tablespoon of fenugreek seeds (methi)
  • 1 tablespoon of black mustard seeds (rai)
  • 1 tablespoon of nigella seeds (kalonji)
  • 1 tablespoon of salt (or as per taste)
  • 1/2 cup of vinegar
  • 2 tablespoons of lemon juice
  • 2-3 sprigs of curry leaves

Method:

  1. Marinate the mutton: In a bowl, mix the mutton pieces with ginger-garlic paste, red chili powder, turmeric powder, and salt. Let it marinate for at least 1 hour.

  2. Heat mustard oil in a pan until it reaches smoking point. Turn off the heat and let it cool down slightly.

  3. In another pan, dry roast fennel seeds, cumin seeds, fenugreek seeds, black mustard seeds, and nigella seeds until fragrant. Grind them to a coarse powder.

  4. Heat the mustard oil again and add the ground spice powder. Cook for a minute on low heat.

  5. Add the marinated mutton to the pan along with curry leaves. Cook on medium heat until the mutton is tender and the oil starts to separate.

  6. Once the mutton is cooked, add vinegar and lemon juice. Mix well and cook for another 2-3 minutes.

  7. Turn off the heat and let the pickle cool down completely.

  8. Transfer the mutton pickle to a clean, sterilized jar. Make sure the pickle is completely submerged in oil.

  9. Seal the jar tightly and let it mature for at least 2-3 days before consuming.
