Ingredients:

  • 500g mutton, bone-in, cut into small pieces
  • 1 cup broken wheat (dalia)
  • 1/2 cup whole masoor dal (red lentils)
  • 1/4 cup chana dal (split chickpeas)
  • 1/4 cup moong dal (split mung beans)
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon garam masala powder
  • Salt to taste
  • 1/4 cup cooking oil or ghee
  • Fresh coriander leaves for garnish
  • Sliced ginger for garnish
  • Lemon wedges for serving

Method:

  1. Wash the broken wheat and lentils thoroughly, then soak them in water for at least 1 hour.
  2. In a large pot or pressure cooker, heat the cooking oil or ghee over medium heat. Add the chopped onions and sauté until golden brown.
  3. Add the ginger-garlic paste and green chilies, and sauté for another minute.
  4. Now, add the chopped tomatoes and cook until they turn soft and mushy.
  5. Add the mutton pieces to the pot, along with turmeric powder, red chili powder, garam masala powder, and salt. Mix well and cook for 5-7 minutes until the mutton is browned.
  6. Drain the soaked wheat and lentils and add them to the pot. Stir well to combine everything.
  7. Add enough water to cover all the ingredients (about 4-5 cups). If using a pressure cooker, close the lid and cook on high pressure for about 4-5 whistles. If using a regular pot, cover and cook on low heat for 2-3 hours, stirring occasionally, until the meat is tender and the wheat and lentils are cooked through.
  8. Once the Haleem is cooked, use a hand blender or potato masher to blend it to a smooth consistency. You can leave some chunks of meat for texture if desired.
  9. Adjust the seasoning according to your taste preferences.
  10. Serve hot, garnished with fresh coriander leaves, sliced ginger, and lemon wedges on the side. Enjoy your delicious Mutton Haleem with naan or rice!
