Delicious Mutton Biryani Recipe: A Flavorful Journey to Culinary Bliss

Originating from the kitchens of the Indian subcontinent, this exquisite dish combines tender mutton, fragrant spices, and fluffy rice to create a symphony of flavors that will tantalize your taste buds. Join us as we guide you through the simple steps to create this masterpiece in your own kitchen.

Ingredients:

  • 500g mutton, cut into pieces
  • 2 cups basmati rice, washed and soaked for 30 minutes
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise
  • 1/4 cup chopped coriander leaves
  • 1/4 cup chopped mint leaves
  • 4 tablespoons ghee or oil
  • Whole spices: 2 bay leaves, 4 green cardamom pods, 4 cloves, 1-inch cinnamon stick, 1 teaspoon cumin seeds
  • Ground spices: 1 teaspoon turmeric powder, 1 tablespoon red chili powder, 1 tablespoon biryani masala (or garam masala), salt to taste
  • Saffron strands soaked in 2 tablespoons warm milk (optional)

Method:

  1. Heat ghee or oil in a large pot or pressure cooker. Add the whole spices and sauté until fragrant.
  2. Add the sliced onions and cook until golden brown. Add the minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
  3. Add the chopped tomatoes and cook until they turn soft and mushy.
  4. Now, add the mutton pieces to the pot. Cook until the mutton changes color and is sealed.
  5. Add the ground spices - turmeric powder, red chili powder, biryani masala, and salt. Mix well to coat the mutton evenly.
  6. Pour in the yogurt and mix until well combined. Cook for a few minutes until the oil starts to separate from the masala.
  7. Drain the soaked rice and add it to the pot. Gently mix with the masala, taking care not to break the rice grains.
  8. Add enough water to cook the rice (approximately 3 cups). Bring to a boil, then reduce the heat to low. Cover and cook until the rice is 80% done.
  9. Once the rice is almost cooked, sprinkle chopped coriander and mint leaves over the top. Drizzle the saffron-infused milk (if using).
  10. Cover the pot with a tight-fitting lid and cook on low heat for another 10-15 minutes, until the rice is fully cooked and the mutton is tender.
  11. Remove from heat and let it sit for a few minutes before serving. Fluff the biryani gently with a fork before serving to mix the layers of rice and mutton.

Serve hot with raita (yogurt dip) and enjoy the heavenly flavors of homemade Mutton Biryani!
