Introduction: Rogan Josh is a quintessential dish from the beautiful Kashmir region, known for its rich and aromatic flavors. This iconic dish is a staple in Kashmiri cuisine, featuring tender mutton cooked in a blend of spices and aromatic herbs. Today, I'll be sharing with you an authentic Kashmiri Rogan Josh mutton curry recipe that will surely tantalize your taste buds.

Ingredients:

  • 1 kg mutton, cut into pieces
  • 4 tablespoons mustard oil or ghee
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, minced
  • 2-3 green chilies, slit lengthwise
  • 2 tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 2 black cardamom pods
  • 4 green cardamom pods
  • 4 cloves
  • 2-inch cinnamon stick
  • 1 bay leaf
  • 1 teaspoon fennel seeds
  • 1 teaspoon Kashmiri red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground fennel seeds
  • Salt to taste
  • Fresh coriander leaves for garnish

Method:

  1. Heat mustard oil or ghee in a heavy-bottomed pan or pressure cooker over medium heat. Add cumin seeds, black cardamom pods, green cardamom pods, cloves, cinnamon stick, bay leaf, and fennel seeds. Saute for a minute until fragrant.
  2. Add chopped onions and saute until they turn golden brown.
  3. Add minced garlic, ginger, and green chilies. Saute for another 2-3 minutes until the raw aroma disappears.
  4. Add chopped tomatoes and cook until they turn soft and mushy.
  5. Add Kashmiri red chili powder, turmeric powder, ground coriander, ground ginger, ground fennel seeds, and salt. Mix well and cook for a couple of minutes.
  6. Add the mutton pieces to the spice mixture and mix until well coated.
  7. Add enough water to cover the mutton pieces. If using a pressure cooker, close the lid and cook for about 20-25 minutes or until the mutton is tender. If using a regular pan, cover and cook on low heat until the mutton is tender, stirring occasionally and adding more water if necessary.
  8. Once the mutton is cooked, increase the heat to high and cook until the gravy thickens and the oil separates (this is where the "rogan" or red oil comes from).
  9. Garnish with fresh coriander leaves and serve hot with steamed rice or naan bread.
