Introduction: Mutton Korma is a classic Indian dish known for its rich and aromatic flavors. Made with tender pieces of mutton cooked in a creamy and aromatic sauce, this dish is a favorite at dinner tables across the country. Follow this simple recipe to create your own mouthwatering Mutton Korma at home.

Ingredients:

  • 500g mutton, cut into bite-sized pieces
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons ginger-garlic paste
  • 1 cup yogurt
  • 1/2 cup cashew nuts, soaked in water
  • 1/4 cup desiccated coconut
  • 4-5 green cardamom pods
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 1 bay leaf
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons ghee (clarified butter) or oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Marinate the mutton: In a large bowl, combine the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, and salt. Mix well and let it marinate for at least 30 minutes.

  2. Prepare the spice paste: In a blender, combine soaked cashew nuts, desiccated coconut, and a little water. Blend into a smooth paste and set aside.

  3. Heat ghee or oil in a heavy-bottomed pan over medium heat. Add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté until fragrant.

  4. Add chopped onions to the pan and sauté until they turn golden brown.

  5. Add the tomato puree to the pan and cook until the oil starts to separate from the masala.

  6. Now, add the marinated mutton to the pan and cook for 8-10 minutes, stirring occasionally.

  7. Stir in the spice paste and mix well to coat the mutton pieces evenly.

  8. Add coriander powder and red chili powder to the pan and mix well.

  9. Pour in enough water to cover the mutton pieces. Cover the pan with a lid and simmer for 45-50 minutes or until the mutton is cooked through and tender.

  10. Once the mutton is cooked, check the seasoning and adjust salt and spices if needed.

  11. Garnish with fresh coriander leaves and serve hot with rice, naan, or roti.
