Ingredients:

  • 4-6 mutton trotters (paya), cleaned and cut into pieces
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 4-5 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise
  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder (adjust according to taste)
  • Salt to taste
  • 2 tablespoons oil or ghee
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. Clean the mutton trotters thoroughly under running water. If they are too large, you can ask your butcher to cut them into smaller pieces.
  2. Heat oil or ghee in a pressure cooker or a large pot over medium heat. Add chopped onions and sauté until they turn golden brown.
  3. Add minced garlic, grated ginger, and slit green chilies. Sauté for another couple of minutes until the raw smell disappears.
  4. Add chopped tomatoes to the pot and cook until they turn mushy and the oil starts to separate from the masala.
  5. Now, add the mutton trotters to the pot and mix well with the masala.
  6. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix everything together, ensuring the trotters are well coated with the spices.
  7. Pour enough water to cover the trotters completely. If using a pressure cooker, close the lid and cook for about 20-25 minutes or until the trotters are tender. If using a regular pot, cover and cook until the trotters are cooked through, adding more water if needed.
  8. Once the trotters are tender, check for seasoning and adjust according to your taste.
  9. Serve hot, garnished with freshly chopped coriander leaves and accompanied by lemon wedges for squeezing over the soup.
